Holiday Baking | Hot Chocolate Brownies

Happy Holidays!!

I Love Christmas.

And I enjoy baking.

But I need a good reason (and lately Tuesday isn’t a good enough reason).

So I decided to try something new this year.

I only have so much patience for marathon baking, but I do like to get it all done at one time.

When I was thinking about what I wanted to make this year, I decided to go beyond my regular old yummy oooey gooey delicious brownies, and try something different.

I decided to one up that good old box brownie mix and tried adding on just a little bit to get a different taste for my brownies.

I used coconut oil instead of vegetable oil, and it did add a little something, and threw in some marshmallows to go for a Hot Chocolate Brownie taste.

I did deviate from the box directions a little bit, but they turned out delicious and brought with them memories of warm and delicious Hot Chocolate.

Hot Chocolate Brownies

Hot Chocolate Brownies

Delicious brownies with a hint of coconut and the warmth of a cup of Hot Coco.

Yields: up to 48 mini brownies

  • 1 Box Betty Crocker Milk Chocolate Brownie Mix
  • 3 Tablespoons Water
  • 1/2 Cup Vegetable Oil (I used Coconut Oil)
  • 2 Eggs
  • 1/2 Cup Small & Fluffy Marshmallows

Heat oven to 350 degrees Grease Bottom of pan (i used a non-stick muffin pan)

Cut Marshmallows in half or quarters.

Stir brownie mix, water, oil and eggs in medium bowl until well blended. add in marshmallows last. Spread in pan (or muffin tin in my case).

Bake as directed in chart on box, or until toothpick inserted (or fork) comes out of brownie clean.

*Optional 5. A few minutes before taking brownies out of the oven add a few halfed marshmallows to the top of your brownies, and allow them to warm.
